In honor of Enkutatash (Ethiopian New Year) I’m sharing my recipe for recipes Beef Kitfo with Awase. Kitfo is the ultimate celebration dish in Ethiopia, and played an important part of my wedding feast. It can be refined, as it is here, but at its simplest, it’s chunks of raw beef tossed in a spiced butter and then dunked in a spicy dip.
